The training is aimed at producers of pre-packaged foods. And therefore interesting for quality or QA officers of food producers, auditors of certification or control bodies, consultancies and Regulatory Affairs Managers.
In short, everyone involved in food safety.
For companies such as (institutional) kitchens, restaurants, caterers, craft companies and other companies that process unpackaged foods, our Allergen management course catering and care recommended.

Learning objectives and topics

The following topics will be discussed during the training:

  • General explanation of food allergy, celiac disease and intolerance.
  • Allergens; 14 legal allergens and differences in foreign legislation. 
  • Legislation and labeling (including cross-contamination).
  • Other requirements, such as BRC, IFS, FSSC 22000 or certain purchasers. 
  • Free-from claims such as gluten-free or lactose-free. 
  • The five basic pillars of allergen management, including preventing cross-contamination.
  • Risk assessment of allergens with attention to the risk assessment system VITALFor more depth: follow the training on risk calculation of cross-contamination of allergens (VITAL).
  • Analysis methods and validation.

Practical

Our training costs are per person (excluding VAT) and include teaching materials, a well-prepared lunch, coffee, tea and drinks.
After receiving the registration, we will send a confirmation by e-mail.

Cancel

If you are unable to attend, a colleague may take the vacant seat. Written cancellation is possible up to 2 weeks before the start of the course. We then charge € 37,50 administration costs. If canceled within 14 days before the start of the course, the full amount is due. If the minimum number of participants is not reached, the course may be rescheduled to a later date. Of course there is the possibility to refrain from further participation. For classroom training, it can also be decided to move the course to location Scherpenzeel (head office Allergenen Consultancy).
