By demonstrating that proteins are no longer present after cleaning, it has also been shown that all allergens have been removed. Regardless of the type of allergen: milk, peanuts, nuts, gluten, etc. This extra sensitive protein test detects proteins at the level at which allergens can still trigger allergic reactions.
This accurate protein test determines whether all protein residues have been removed and whether the wet cleaning has been performed properly.
Actual product residues are measured and no ATP. A surface is sampled with the swab and the color reaction in the swab shows whether proteins are present. Green is absent, purple is present.
Time can be saved by immediately determining whether the cleaning has been carried out properly. And more importantly: later rejection of products can be prevented. If the result is too high, you can immediately clean again.
Protein swabs are therefore extremely suitable for the verification of cleaning.

Sensitivity
Detection limit from 3 µg protein/100 cm². The test detects all proteins: all allergenic but also all non-allergenic proteins such as proteins from meat or vegetables. Because a product usually consists of different types of proteins, incomplete cleaning is more likely to be noticed when using this test.
Regardless of the type of product and allergens present, all proteins must be removed after cleaning.
Measuring principle
Under alkaline conditions, copper ions (Cu2+) react with protein parts (peptides) to form Cu+. These ions form a purple complex with the reagent bicinchonic acid. This is called the Biuret reaction. The more (total) protein, the stronger and faster the purple coloring occurs.
